Pavlova is New Zealand's national dessert.   

For nearly eighty years it has topped off the traditional fare of gravy-coated roast lamb, fresh peas, kumara and roast potato. It has also been a staple of wedding breakfasts, family gatherings, and all kinds of social functions.  

Pavlova is like a meringue cake, but with a light soft centre and crisp golden crust that literally melt in the mouth. Topped off with fresh whipped cream and selected fruits.  

For many years Cowell’s Genuine Pavlova franchises have been making great Pavlovas to the recipe Ron and Audrey Cowell initially developed.  

THE COWELLS RANGE 

Cowell’s Pavlovas are available in a variety of sizes and packages. 

The most common are:

6 Pack (six single portions)
Standard small (215g) – 6-8 servings
Standard Large (430g) – 12-14 servings
Quarter Acre – catering – 35-40 servings

Vanilla is the traditional flavour, but other flavours and colours are also available including hazelnut and strawberry.

 

Cowell’s Genuine Pavlovas are available from all good New Zealand supermarkets.

 

Shelf-Life and Storage

In accordance with the ANZFA Food Regulations all Cowell’s Pavlovas carry a best before date. The Cowell’s baking process results in a microbiologically safe product, so that even if consumed after the best-before date, it is not harmful.

The traditional boxed Pavlovas will keep for seven days in a cool dry place.  Domed Pavlovas, including six-packs keep for two months.

These periods can be extended for up to six months by storing in a freezer.  Frozen Pavlovas do not require thawing and need only ten minutes to reach room temperature.

Creamed Pavlovas should be stored in a refrigerator for no more than a day or two.  They can be pre-dressed and refrigerated over-night. Left-overs (if any) can also be refrigerated for the next day. 

Don’t forget an uncreamed Pavlova should never be stored in the refrigerator.
